Muffins for breakfast? Why not! Muffins are an easy breakfast option to take with you, that can be quickly prepared for the whole week at the weekends and on top of everything else taste really delicious. Whether prepared with porridge, crunchy or muesli – we think muffins are a good breakfast option if you have little time in the morning. That’s why we’re introducing 6 different breakfast muffin ideas to you today. From sweet to savoury, there’s something for everyone 😉

1. Baked porridge from the muffin pan

In our porridge trends 2019 we have already introduced the “Baked Porridge” to you. The baked porridge can easily be converted into a to-go version in the form of muffins. To prepare the baked porridge from the muffin tray, mix 100 grams of your favourite porridge base with 2 eggs (or egg replacement), 2 tablespoons of baking powder, 100ml of milk of your choice, 2 tablespoons of nut butter, fruit and a sweetening option of your choice. Then bake the muffins at 180 degrees for about 25 minutes in the oven. If you like it fruity our Organic Strawberry Chia Porridge is perfect for this recipe. For those who like to have a savoury breakfast, the baked porridge from the muffin pan can also be prepared with our Pumpkin Tomato Porridge.



2. Filled puff pastry from the muffin tray

You can easily prepare another breakfast idea by turning your muffin tin around. This way you can easily prepare puff pastry bowls. For this you need some puff pastry, which you cut into square pieces and place over the muffin bulge to form small bowls. Bake the puff pastry in your oven according to the package description. There are no limits to your imagination when filling the puff pastry bowls! For example, you can fill them with yoghurt, berries and your favourite crunchy or porridge. The best thing about this recipe? You can also eat the bowl.

3. Oatmeal cups

Delicious breakfast bowls can also be easily prepared with oat flakes. To prepare the oatmeal cups, first smush two ripe bananas and add about 100g honey. Then add 125g of oat flakes and 1 teaspoon of cinnamon and mix the ingredients well together. Put 2 tablespoons of the finished dough into your muffin cups and press it firmly with your fingers so that a hollow is formed in the middle. Bake the oatmeal cups in the oven at 175° for 10-12 minutes. After they are ready, you can take them out of the tray and fill them with whatever you want. For example, you can fill them with yoghurt and berries or with some yoghurt and crunchy.

4. Savoury porridge muffins with spinach and feta

If you like a savoury breakfast, we recommend these spinach feta muffins with porridge. You will need about 300g of spinach, 200g feta, 100g oats and a savoury porridge of your choice. Moreover, you need 150g of flour, 2 teaspoons baking powder, 2 eggs, 60ml olive oil, 250ml milk or vegetable drink and some salt and pepper. First you defrost the spinach and remove the excess liquid. Then you mix the spinach with the eggs, olive oil, milk and season it with salt and pepper. Next, mix all the dry ingredients with the wet ingredients. Finally, carefully stir the feta cubes into the muffin dough. Bake the muffins in the oven for 15 minutes at 200 degrees.

5. Good morning Muesli Muffins

For a really good start into the day you can have our “Good Morning Muffins”. With porridge as the main ingredient, these muffins are a good alternation to the classic porridge. They can be prepared wonderfully at the weekend and are also super tasty.

Good Morning Muffins

Ingredients

  • 150 g Verival Coconut & Apricot Porridge
  • 2 large eggs
  • 150 ml natural yoghurt or vegetable alternative
  • 50 ml vegetable oil
  • 100 g apple sauce
  • 4 tbsp honey
  • 150 g wholemeal spelt flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon

Instructions

  • Preheat the oven to 150 °C.
  • Mix the Verival coconut &apricot porridge with the wholemeal spelt flour, baking powder, baking soda and cinnamon in a bowl.
  • Mix the eggs, natural yoghurt, vegetable oil, apple sauce and honey in a second bowl.
  • Now mix the dry ingredients with the wet ingredients.
  • The dough should not be stirred too much, only until all ingredients are moist.
  • Line a muffin tin with muffin moulds and fill them carefully with a spoon approx. until the muffin moulds are ¾ filled.
  • Bake the muffins in the oven for 20-25 minutes.
  • Then let them cool and enjoy them for breakfast!



6. The Crumble Muffin – Crumble a little bit different

If you want to enjoy a delicious crumble for breakfast, you can simply prepare it in small portions in the muffin tin. Find a recipe for apricot crumble here. You can easily convert the recipe by pouring the mixture into small muffin tins.
